The freakiest side of Aristu, a wine essentially for having fun, without looking for trouble (katu).

The grapes ferment in stainless steel tanks with their skins. When fermentation begins, aggressive oxidative pump-overs are performed to oxidize the color right at the start of fermentation. These pump-overs continue for eight days to homogenize the wine and extract flavors and aromas from the skins. The skins are then pressed and added to the final wine.
