Aristu & Ibonen Ardoak
The grapes were separated and partially crushed before being placed in stainless steel tanks along with the must. Spontaneous fermentation took place over 10 days, with daily pump-overs. The wine macerated with the skins for a further 2 days and was then racked for pressing. It was stabilized for 7 winter months in the cellar due to the temperature fluctuations. Fresh and fruity.
