La Microbodega del Alumbro
The musts from the two grape varieties ferment together after fresh pressing in stainless steel tanks. The wine is then transferred to an airtight, open-air tank where it remains for four months for natural clarification. The volatile acidity is well-integrated with the residual sugar.
