We are therefore faced with a wine in which the clay has given it structure and from which it extracts earthy tones
The grapes, sourced from the Serra de l'Eloi vineyard, are destemmed. They are left to macerate with the skins in an amphora for three weeks before being pressed. The wine is then aged in amphorae for nine months. This is a wine in which the clay has imparted structure and from which it draws earthy notes. The bitterness from the maceration is also present, and a gentle acidity makes it very drinkable.
