Aristu & Ibonen Ardoak
The grapes are unloaded directly into stainless steel tanks, where they begin to ferment spontaneously. Daily pump-overs are performed to homogenize the grapes and prevent them from breaking up, as fermentation continues inside the tanks. Once fermentation is complete, the grapes are pressed, and the free-run wine is transferred back to the same tanks to finish the process.
