Maus Ratafía
A typical dessert drink, handcrafted in every Catalan farmhouse. This one has a low alcohol content, perfect for lingering after a meal.
To make MAUS®️, we macerate 19 different spices along with green walnuts for 7 days in a very neutral molasses-based alcohol, so as not to mask the flavor of the herbs. The walnuts come from Palau d'Anglesoa (Lleida), as do most of the spices. After 7 days, we add beet sugar, avoiding a cloying sweetness on the palate and eliminating any aniseed flavor. The next step is to age this liquid in oak barrels.
Place the ratafia in oak barrels and let it rest for 3 weeks. After this time, bottle the ratafia and let it rest for another 10-15 days to allow the flavors to meld. It is then ready to distribute and consume. We recommend storing it in a cool place, away from direct sunlight. It does not expire and can be kept in the refrigerator, but not in the freezer, as it does not contain enough alcohol to maintain its liquid state.
