Malveral is peaceful

Crushed and macerated with the skins (without stems). Not racked. Pressed after 11 days during full fermentation. Racked after two months to remove impurities, and bottled after another four months, in the spring of 2022. Fresh grass, hay, a touch of fennel, apple, white flowers, orange blossom, peach.
